Do you always crave something sweet for breakfast but want something a little healthier for you? Try making these SUPERFOOD BREAKFAST COOKIES! 🍪
These cookies are filled with high-quality ingredients and are seriously so easy to whip up for breakfast or as a quick little treat.
What you’ll need:
1 ripe banana
½ cup raisins
3 tbsp maple syrup
1 cup rolled oats
½ tsp baking powder
1 tsp cinnamon
½ cup flour (can sub for gluten-free flour)
1 tbsp chia seeds
¼ cup flaxseed meal
½ cup Evie's Snacks Sweet & Salty Pecans (chopped)
2 tbsp almond milk
¼ tsp salt
3 tbsp avocado oil (can sub coconut oil or olive oil)
How to make:
Preheat the oven to 325ºF
Mash the banana in a large bowl until it’s almost liquid
Add the milk, avocado oil, and maple syrup. Mix until combined
Add the chia seeds, flaxseed meal, rolled oats, cinnamon, baking powder, flour, and salt, and then mix again
Set aside for 5 minutes so the chia seeds and flaxseed meal absorb some of the liquid.
Add chopped pecans and give the batter a mix
Scoop out about ¼ cup of the cookie batter onto a parchment-lined baking tray and form into cookies
Bake for 17 minutes or until the edges are golden brown
Remove from the oven and let cool for about 5 minutes
Makes 12 breakfast cookies
