Espresso Marbled Pecan Loaf Cake by Fidelia Grace

What you’ll need: 

Ingredients

1 cup chocolate chips 

2 ¼ cup flour 

1 ½ cup coconut sugar 

1 ¼ tsp baking powder 

⅓ tsp baking soda 

¾ cup almond milk (can sub regular milk) 

3 eggs 

¼ cup avocado oil 

1 tbsp espresso powder 

1 ½ tsp vanilla extract 

½ cup chopped Evie’s Snacks Original Pecans 

 

Chocolate Drizzle: 

¼ cup chocolate chips 

1 tbsp coconut oil

 

How to make: 

Preheat your oven to 350°F (175°C). 

Grease and flour a loaf pan, or line it with parchment paper for easy removal.

 In a small bowl, melt the chocolate chips either in the microwave or using a double boiler. Set aside to cool slightly.

 In a large mixing bowl, combine the flour, coconut sugar, baking powder, and baking soda. Mix well to ensure even distribution of ingredients. 

In another bowl, whisk together the almond milk, eggs, avocado oil, espresso powder, and vanilla extract until well combined. 

Pour the wet ingredients into the dry ingredients and mix until just combined.

Gently fold in the chopped pecans until evenly distributed throughout the batter. 

Take about a third of the batter and mix it with the melted chocolate until fully incorporated, creating a chocolate batter. 

Pour half of the plain batter into the prepared loaf pan, then spoon half of the chocolate batter on top. Use a knife or skewer to gently swirl the batters together, creating a marbled effect. Repeat with the remaining plain batter and chocolate batter, swirling them together. 

Tap the loaf pan gently on the countertop to remove any air bubbles. 

Bake in the preheated oven for 50-60 minutes, or until a toothpick inserted into the center comes out clean.

 Once baked, remove the loaf from the oven and allow it to cool in the pan for 10-15 minutes before transferring it to a wire rack to cool completely. 

Make the chocolate drizzle by adding the chocolate chips and the coconut oil to a small bowl. Melt in the microwave and then drizzle on top of the loaf cake.
