Perfect for breakfast or dessert, you NEED to try our Espresso Marbled Pecan Loaf Cake ☕️🍰🍫
What You’ll Need:
- 1 cup chocolate chips
- 2 ¼ cup flour
- 1 ½ cup coconut sugar
- 1 ¼ tsp baking powder
- ⅓ tsp baking soda
- ¾ cup almond milk (can sub regular milk)
- 3 eggs
- ¼ cup avocado oil
- 1 tbsp espresso powder
- 1 ½ tsp vanilla extract
- ½ cup chopped Evie’s Snacks Original Pecans
Chocolate Drizzle:
- ¼ cup chocolate chips
- 1 tbsp coconut oil
How To Make:
- Preheat your oven to 350°F (175°C).
- Grease and flour a loaf pan, or line it with parchment paper for easy removal.
- In a small bowl, melt the chocolate chips either in the microwave or using a double boiler. Set aside to cool slightly.
- In a large mixing bowl, combine the flour, coconut sugar, baking powder, and baking soda. Mix well to ensure even distribution of ingredients.
- In another bowl, whisk together the almond milk, eggs, avocado oil, espresso powder, and vanilla extract until well combined.
- Pour the wet ingredients into the dry ingredients and mix until just combined.
- Gently fold in the chopped pecans until evenly distributed throughout the batter.
- Take about a third of the batter and mix it with the melted chocolate until fully incorporated, creating a chocolate batter.
- Pour half of the plain batter into the prepared loaf pan, then spoon half of the chocolate batter on top. Use a knife or skewer to gently swirl the batters together, creating a marbled effect. Repeat with the remaining plain batter and chocolate batter, swirling them together.
- Tap the loaf pan gently on the countertop to remove any air bubbles.
- Bake in the preheated oven for 50-60 minutes, or until a toothpick inserted into the center comes out clean.
- Once baked, remove the loaf from the oven and allow it to cool in the pan for 10-15 minutes before transferring it to a wire rack to cool completely.
- Make the chocolate drizzle by adding the chocolate chips and the coconut oil to a small bowl. Melt in the microwave and then drizzle on top of the loaf cake.
- Once cooled, slice and serve your Espresso Marbled Pecan Loaf Cake, and enjoy!
