Pecan Corn Salad by Fidelia Grace

 This PECAN CORN SALAD is not only perfect for those last summer parties you’re getting in before fall, but you can easily make this the night before and toss the dressing in right before you serve your guests 🎉 


It’s prepped and ready in less than 10 minutes. Can it get any easier? ✨


*TIP:  if you’re taking this salad to a party, wait to toss the dressing in until you’re ready to eat. It’ll keep the salad crunchy and fresh* 

 

What You'll Need:

Salad ingredients-

2 16oz bags of frozen sweet corn (thawed) 

1 shallot (chopped) 

1 cup parsley 

1 avocado 

2 cups cherry tomatoes (sliced in half) 

1 bag Evie's Snacks Sweet & Salty Roasted Pecans 

 

Almond butter dressing-

1 lime (juiced) 

1/4 cup olive oil 

1 clove garlic (minced) 

1 tablespoon almond butter 

1 tsp Salt 

1/4 pepper 

 

How to make:

In a large bowl add corn, chopped shallot, parsley, avocado, cherry tomatoes, and the salted roasted pecans. Set aside. 

 In a small bowl make the dress by adding the lime juice, olive oil, fresh garlic, almond butter, salt & pepper. Mix until all ingredients are well incorporated. 

 Mix the dressing into the salad and toss until combined. Serve with a dollop of greek yogurt or extra lime juice.
