Summer Pecan Salad by Fidelia Grace

We're soaking up the last bits of summer and enjoying this delicious summer pecan salad with green goddess dressing and Sweet and Salty Pecans. ☀️

 

What you'll need:

-3 cups romaine lettuce 

-1 cup chopped kale 

-1 cup baby arugula 

-1 small cucumber 

-3 small radishes (sliced) 

-½ cup chickpeas 

-2 tbsp fresh mint 

-½ cup feta 

-½ cup Evie’s Snacks Sweet & Salty Pecans 

Green Goddess Dressing: 

-¼ cup lemon juice 

-¼ cup olive oil 

-¼ cup tahini 

-½ cup fresh italian parsley 

-2 tsp salt 

-1 tsp ground black pepper 

-1 tsp garlic powder 

-1 tsp raw honey 


Instructions: 

Prepare the Salad:

In a large bowl, combine the chopped romaine lettuce, baby arugula, chopped kale, sliced cucumber, and sliced radishes.

Add the chickpeas, chopped mint, crumbled feta cheese, and Sweet & Salty Pecans to the bowl. Toss gently to mix the ingredients evenly. 

Make the Green Goddess Dressing:

In a blender or food processor, combine the lemon juice, olive oil, tahini, fresh Italian parsley, salt, ground black pepper, garlic powder, and raw honey.

Blend until the dressing is smooth and creamy. If the dressing is too thick, you can add a little water to reach your desired consistency.

Dress the Salad:

Pour the Green Goddess Dressing over the salad ingredients in the bowl.

Toss the salad thoroughly to ensure all the ingredients are well coated with the dressing.

Transfer the dressed salad to a serving platter or individual plates.

Enjoy your fresh and flavorful salad immediately.

NOTES: 

You can customize the salad by adding or substituting other ingredients such as cherry tomatoes, avocado, or grilled chicken.

For a more intense flavor, let the salad sit in the fridge for about 15-30 minutes before serving to allow the flavors to meld together.
