Wild Rice Pecan Salad by Fidelia Grace

You’re going to be shocked at how delicious and easy this Wild Rice Pecan Salad is! 

This healthy salad comes together in no time and is perfect to add to your meal prep plan this New Year. Packed with delicious wild rice and tasty crunchy pecans from Evie’s Snacks. We promise you’ll be making this every week for your family!

Ingredients:
2 cups chicken broth
1 cup wild rice
2 tbsp Italian seasoning mix
1 tbsp olive oil
1 cup cubed sweet potato
¼ cup onion (chopped)
⅓ cup currents
½ cup Evie’s Raw, Organic Pecans
parsley to garnish

Recipe details:

  1. Add the chicken broth to a small saucepan with the Italian seasoning. Bring to a boil and then add the wild rice.
  2. Place the lid on top of the saucepan and then lower the heat to low. Cook until the rice is tender (about 30 minutes).
  3. In a separate medium size pan, add the olive oil and cubed sweet potato. Cook until tender.
  4. Add the chopped onion and saute until translucent.
  5. Once the rice is cooked, transfer to a large bowl and then add the sweet potato and onion mixture. Mix.
  6. Add the parsley, currents, and chopped pecans.
  7. Mix again until all of the ingredients are well combined.
  8. Voila!
