Chocolate Pecan Pie by Fidelia Grace

Ā 

What you'll need:

Pie Crust:Ā 

-1 Ā¼ cup flourĀ 

-Ā¼ tsp saltĀ 

-Ā½ tsp sugarĀ 

-Ā¼ cup ice cold waterĀ 

-Ā½ cup cold (cubed) butterĀ 

Chocolate Pecan Filling:Ā 

-1 Ā½ cup Evieā€™s Snacks Raw, OrganicĀ Pecans (chopped) *Save about Ā½ cup whole pecans for the topĀ 

-1 cup dark chocolate chipsĀ 

-3 eggsĀ 

-Ā¾ cup maple syrupĀ 

-Ā¼Ā  cup coconut sugar (can sub for regular sugar if you donā€™t have coconut sugar)Ā 

-1 tbsp cocoa powderĀ 

-4 tbsp butter (melted but cooled)Ā 

-1 tsp vanilla extractĀ 

-1 tsp saltĀ 

Whipped Cream Topping:Ā 

-Ā½ cup heavy creamĀ 

-1 tsp vanilla extractĀ 

*feel free to add some powdered sugar. I prefer to not sweeten mine because it balances out the sweetness of the pie.Ā 


How to make:

Pie Crust:

Prepare the Dry Ingredients:

  • Ā In a large bowl, combine 1 Ā¼ cups of flour, Ā¼ teaspoon of salt, and Ā½ teaspoon of sugar. Mix well.

Incorporate the Butter:

  • Ā Add the Ā½ cup of cold, cubed butter to the flour mixture. Using a pastry cutter or your fingers, cut the butter into the flour until the mixture resembles coarse crumbs.

Add Water:Ā 

  • Slowly drizzle in Ā¼ cup of ice-cold water while mixing. Start with a tablespoon at a time, adding just enough water for the dough to come together. The dough should be slightly sticky but not wet.

Chill the Dough:Ā 

  • Form the dough into a ball, flatten it into a disc, wrap it in plastic wrap, and refrigerate for at least 30 minutes.

Roll Out the Dough:Ā 

  • Once chilled, roll out the dough on a lightly floured surface to fit a 9-inch pie dish. Transfer the dough to the pie dish, pressing it gently into the bottom and sides. Trim any excess dough hanging over the edges. Place in the fridge while you make the filling.Ā 

Chocolate Pecan Filling:

Preheat the Oven:Ā 

  • Preheat your oven to 350Ā°F.Ā 

Mix the Filling:

  • Ā In a large mixing bowl, whisk together 3 eggs, Ā¾ cup maple syrup, Ā¼ cup coconut sugar, 1 tablespoon cocoa powder, 4 tablespoons melted (but cooled) butter, 1 teaspoon vanilla extract, and 1 teaspoon salt until smooth.

Add the Pecans and Chocolate:Ā 

  • Stir in 1 Ā½ cups of chopped pecans (save about Ā½ cup of whole pecans for the top) and 1 cup of dark chocolate chips.

Pour into the Crust:Ā 

  • Pour the filling mixture into the prepared pie crust. Arrange the reserved whole pecans on top in a decorative pattern.

Bake:Ā 

  • Bake in the preheated oven for 45-55 minutes, or until the filling is set and the pie crust is golden brown. If the crust starts to brown too quickly, cover the edges with foil.

Cool:Ā 

  • Allow the pie to cool completely on a wire rack before serving.

Whipped Cream Topping:

Whip the Cream:Ā 

  • In a mixing bowl, combine Ā½ cup of heavy cream and 1 teaspoon of vanilla extract. Whip the mixture with a hand mixer or whisk until soft peaks form. If desired, add powdered sugar to sweeten the whipped cream to your taste.

Serve:

  • Ā Serve each slice of pie with a dollop of whipped cream on top.
