Oatmeal Chocolate Pecan Cookies

Santa’s Favorite Oatmeal Chocolate Chip Pecan Cookies 💌🍪✨

What You'll Need:

(for 10-12 cookies)

  • 1/2 cup butter, room temperature
  • 1/3 cup brown sugar
  • 1/4 cup granulated sugar
  • 1 large egg
  • 1 tbsp vanilla extract
  • 1 cup AP flour
  • 1 tsp baking soda
  • 1 tsp cinnamon
  • ½ tsp salt
  • 1 1/4 cup rolled oats
  • 1 cup chocolate chips
  • 1 cup Evie’s Sweet & Salty Pecans

How to Make:

  1. Preheat oven to 350°F
  2. In a large bowl, beat butter, brown sugar, and granulated sugar together until light and fluffy.
  3. Add the egg and vanilla; mix on medium speed until combined.
  4. Add flour, baking soda, cinnamon, and salt; mix on medium until combined.
  5. Add oats, then mix on low speed. Fold in chocolate chips and chopped pecans.
  6. Using a cookie scoop, drop 2-inch dough balls onto a parchment-lined baking sheet. Freeze any extra dough balls for later.
  7. Bake for 10-12 minutes at 350°F or until edges turn golden
