Healthy Cranberry Pecan Muffins – the perfect cozy snack for the holidays! Bonus: they’ll make your whole house smell amazing 😊
What You'll Need:
- 1/4 cup avocado oil
- 2 large eggs
- 2/3 cup maple syrup
- 1/2 cup milk
- 1 cup almond flour, packed
- 1.5 cups AP flour
- 1 tsp cinnamon
- 1/4 tsp salt
- 2 tsp baking powder
- 1 1/2 cups cranberries
- 1 cup Evie’s Brown Butter Rum Pecans
- Brown sugar or streusel for the top (optional)
How to Make:
- Preheat the oven to 375°F and line each muffin cup with parchment paper.
- In a large bowl, whisk together oil, eggs, milk, and maple syrup until well combined.
- Add in almond flour, AP flour, cinnamon, salt, and baking powder. Mix until just combined.
- Fold in the cranberries and roasted pecans.
- Fill all 12 muffin cups evenly. Sprinkle with brown sugar or streusel (this is optional).
- Bake for 20-23 minutes, or until a toothpick comes out clean.
