Healthy Cranberry Pecan Muffins โ€“ the perfect cozy snack for the holidays! Bonus: theyโ€™ll make your whole house smell amazing ๐Ÿ˜Š

Makes 1 dozen:

  • 1/4 cup avocado oil
  • 2 large eggs
  • 2/3 cup maple syrup
  • 1/2 cup milk
  • 1 cup almond flour, packed
  • 1.5 cups AP flour
  • 1 tsp cinnamon
  • 1/4 tsp salt
  • 2 tsp baking powder
  • 1 1/2 cups cranberries
  • 1 cup Evieโ€™s Brown Butter Rum Pecans
  • Brown sugar or streusel for the top (optional)

Instructions:

  • Preheat the oven to 375ยฐF and line each muffin cup with parchment paper.
  • In a large bowl, whisk together oil, eggs, milk, and maple syrup until well combined.
  • Add in almond flour, AP flour, cinnamon, salt, and baking powder. Mix until just combined.
  • Fold in the cranberries and roasted pecans.
  • Fill all 12 muffin cups evenly. Sprinkle with brown sugar or streusel (this is optional).
  • Bake for 20-23 minutes, or until a toothpick comes out clean.
