Maple Pecan Cake by Fidelia Grace

Elevating your dessert game with this decadent Maple Pecan Cake crowned with luscious cream cheese frosting. Indulgence at its finest – because every slice deserves a celebration!

What you'll need:

Ingredients: 

 ¾ cup unsalted butter (softened) 

 1 cup coconut sugar 

 2 tbsp date sugar 

 2 large eggs 

 1 tsp vanilla extract 

 ⅔ cup coconut milk 

 ⅓ cup greek yogurt 

 1 ½ cup flour 

 ½ tsp salt 

 ¾ tsp baking powder 

 ½ tsp cinnamon 

 1.2 tsp ginger 

 ½ cup Evie’s Snacks Raw Pecans 

 

Cream Cheese Frosting: 

 8 oz  cream cheese 

 1/2 cup salted butter 

 4 cups powdered sugar 

 2 tsp vanilla extract 

 

How to make:

Pre-heat oven to 350F 

Add the softened butter, coconut sugar, and date sugar to a large bowl and mix with a hand mixer until light and fluffy. 

Add the eggs, date sugar, vanilla extract, coconut milk, greek yogurt, and mix until combined. 

Then add the flour, cinnamon, ginger, salt, baking powder and mix. 

Fold in the chopped pecan. 

Pour cake batter into 2 6inch parchment lined baking tins. 

Bake for 25 minutes. 

Remove from the oven and let cool. Wrap with plastic wrap and place in the fridge for an hour. 

Combine all of the cream cheese frosting ingredients into a small bowl and mix on medium speed (using a hand mixer) until light and fluffy. 

Frost the cake either using a piping bag or a knife. 

Sprinkle pecans on top and then cut into slices.
