Try making these PEANUT BUTTER PECAN ENERGY BITES 🥜⚡️Chewy, sweet, and crunchy - the perfect afternoon pick-me-up for your busy days when you’re running around. Filled with gluten-free oats, pecans, and coconut! These little energy bites seriously pack in the energy and the flavor!Â
What You’ll Need:Â
- 1 cup gluten-free oatsÂ
- ½ cup chopped Evie’s Original PecansÂ
- ½ cup peanut butterÂ
- ÂĽ cup maple syrupÂ
- ÂĽ cup coconutÂ
- 3 tbsp dark chocolate chipsÂ
- Chocolate Drizzle:Â
- 3 tbsp dark chocolate chipsÂ
How To Make:Â
- Â Add the gluten-free oats to a bowl with the chopped pecans, coconut, and dark chocolate chips. Mix until combined.
- Â Add the peanut butter, and maple syrup. Mix until all of the dry ingredients are fully coated.
- Â Add about 1 tbsp of the mixture into silicone molds and place in the freezer for at least 1 hour to set.Â
- Â Melt the dark chocolate chips in the microwave (30 seconds at a time).Â
- Â Remove the energy bites from the freezer and drizzle dark chocolate on top.Â
- Store in the refrigerator in an air-tight container for up to a week!Â
- Â Makes 18 small energy bitesÂ
