Peanut Butter Pecan Energy Bites by Fidelia Grace

Are you looking for an easy no-bake treat to help you stay fueled with energy throughout the day? Try making these PEANUT BUTTER PECAN ENERGY BITES 🥜⚡️


Chewy, sweet, and crunchy - the perfect afternoon pick-me-up for your busy days when you’re running around. Filled with gluten-free oats, pecans, and coconut! These little energy bites seriously pack in the energy and the flavor! 

 

What you’ll need: 

1 cup gluten-free oats 

½ cup chopped Evie’s Original Pecans 

½ cup peanut butter 

¼ cup maple syrup 

¼ cup coconut 

3 tbsp dark chocolate chips 

Chocolate Drizzle: 

3 tbsp dark chocolate chips 


How to make: 

 Add the gluten-free oats to a bowl with the chopped pecans, coconut, and dark chocolate chips. Mix until combined. 

 Add the peanut butter, and maple syrup. Mix until all of the dry ingredients are fully coated.

 Add about 1 tbsp of the mixture into silicone molds and place in the freezer for at least 1 hour to set. 

 Melt the dark chocolate chips in the microwave (30 seconds at a time). 

 Remove the energy bites from the freezer and drizzle dark chocolate on top. 

Store in the refrigerator in an air-tight container for up to a week! 

 Makes 18 small energy bites
